The father and son team started growing coffee together over 12 years ago. Their 16 hectare farm sits at an impressive elevation of 1780 masl. Originally they produced traditional coffees, but in recent years they have focused on unique varieties such as Pink Bourbon, Geisha and Orange Bourbon.
Pink Bourbon is known for its fruity and floral attributes and these have been pronounced further by Ari and Jimmy's extended fermentation process. After picking, whole cherries are fermented for 72 hours before being sundried on patios for 4 weeks.
